I like variety and variety is good for you..
Let me think what I had. Field greens, spinach, tomato , cucumber, feta, olives, artichokes, radishes sunflower seeds, hard boiled egg, chicken, peppers, black beans, olive oil and balsamic vinegar.
Maybe I missed something?

I would have left out the field greens (whatever they are) spinach, feta, artichokes, seeds, eggs, chicken and black beans.
Added onions, grapes, apples and swapped the vinegar for a thicker balsamic glaze, and served the chicken on the side.
Thats basically chicken with a side of fruit.
Field greens are just some kind of lettuce.
I was at salad bar and I like to graze on a little of everything.
We call greens veg, like peas, green beans etc.
Definitely include lettuce, but I prefer rocket, it has a stronger taste.

Trying to keep my protein intake up so had scrambled eggs (with grated cheese and onions mixed in) on toast. I'm not a big lover of eggs so it felt more a necessity rather than a preference. Followed by some caramel shortcake bites as a reward for good behaviour.

Now, put some cottage cheese (1/2-1 cup) in those eggs, because even 4 eggs isn't enough protein for one meal..

Fish for me also, baked spud and cauliflower…smoked haddock this end though not salmon. Fresh fruit salad for afters.
