I normally do a similar cucumber salad with Greek yoghurt and fresh mint. Never occurred to me to try a sour cream variation.
Sounds lovely, as do the fishcakes.
I love cucumber, OH won't eat it, and if he finds mayo has been added to a bought sandwich, he can sulk all day.
Yet his favourite Greek dip is tzatziki....
Go figure!
Hate to break it to you - the sourcream combo was delish!
I bet it was.
For some reason, I started peeling cucumber a couple of years ago, I think I was getting indigestion, and someone mentioned cucumber rind could cause it. Having read that recipe, I am going to start leaving it on again.

And I’m gonna try this simple little salad that popped up on my Google suggestions page.

If you haven’t already got one, you need something like this for razor-thin cucumber slices (as they should be, imo ). You‘ll barely taste the peel, let alone have trouble digesting it
(sorry, still don’t know how to post images 🤦🏻♀️)

I have a cupboard full of gadgets I never use Vam.
I am more a rustic cook... great big wedges of cucumber (a big thick piece tastes like melon to me) my plates of food don't have much finesse about them.

We did Mags. Too cold to sit out, but inside has all been refurbished, so it's very comfy.

It does Mags, we used to do evening meals out a lot more, now we tend to go out more in the daytime or for an early tea.
It must be an age thing, but coming home in the afternoon, then getting ready to eat out for 8 or 9pm...started to be a bit of a drag a couple of years ago....especially in winter.
I only eat one meal a day anyway, so if we have eaten around 3 or 4pm...there is no way I want to eat another meal a few hours later.

I'm the same. We both hate eating out at night now, unless we are meeting up with friends. In the afternoon is much better, then can relax.
Like you, I couldn't eat another meal again at tea time.

Jacket potatoes with cheese, onion and coleslaw. Comfort food which my bloke decided on the spur of the moment to.cook. So I certainly didn't stop him!

Basically......
"Pak choy and bok choy are essentially the same vegetable, just with different spellings and sometimes slight variations in appearance. They are both types of Chinese cabbage (Brassica rapa subsp. chinensis). The main difference often lies in the color of the stem; bok choy generally has white stems, while pak choy has green stems."
