Had lunch at new beachside restaurant that has an Italian chef.
I had THE best seafood pasta (linguine alla marinara) outside of my Mamma’s kitchen

Well it sounds lovely.
No beach side restaurant here, we had home cooked pork chops, potatoes and boiled carrots with black pepper and butter.

ooh - can’t remember when I last ate a proper full-on pork chop! 😋
Thanks It really was lovely. So good in fact, that a few of us are going back for an early supper there later. Going out to eat 2 days in a row is unusual for me these days. But I’m curious to find out how an Italian cooks paella

Do you pan cook those chops - if you do have you got a tip for how to do it without them coming out a bit dry and chewy like mine always seem to turn out?

No I don't. I always grilled chops, then my grill broke, so I got into the habit of cooking them in the oven, and I still do that even though I have a new grill.
Preferably thick chops, not pork steaks (which are always dry) 190/200 in a fan oven, loads of black pepper, then turn them over after around 10/15 minutes, cook on for another 10 minutes, they come out good.

Individual beef and veg pie, spicy wedges, and peas followed by neopol ice-crean and fresh strawberries, washed down with a can of coke. Easy meal.

Had a tapas...it's the weather for it.
Bell peppers stuffed with cheese, hummus, olives stuffed with garlic, garlic bread, goats cheese, and tomatoes in olive oil and balsamic.

It was, the best bought chicken Kiev's, imo, are from Sainsbury's. They have lots of oozy garlic dripping from them when cooked.

Guess
It looks like pork, but it could be tuna steak.
