The shop owner was probably acting on instinct, and he has every right to protect himself and his property.
But....maybe he went a bit too far, he had obviously overpowered the kid after he had stabbed him a couple of times...is saving a few trinkets worth killing a kid, who was cowed on the floor pleading for his life?

As long as he's on his feet, he could pull it and stab you back. One has to assume that someone engaging in robbery like that is also capable of extreme violence. Until he's neutralized he's a threat.
He reacted weird. He didn't drop, and he didn't run. At least until the stabbing was over..
